I know people who have worked in fast food or supermarkets who have a similar story; there are always high walls around the back to hide the mountain of waste. I know of people who scale those walls at night like burglars, living off the perfectly good food that expired that day. But from every bean, no matter how long it was, they chopped out the same couple of inches from the middle and discarded the ends.
